This program will cover considerations for
dealing with disclosures, labeling and regulatory compliance in restaurant
settings, with particular attention to similarities and differences with
requirements for packaged goods. Specific topics covered will include: the
impact of the various provisions of the Food Safety and Modernization Act on a
large restaurant system, including supply chain considerations and recall
capability; FDA requirements for nutritional labeling that apply to chain
restaurants and the practical challenges of compliance and implementation; and
the importance of considering both FDA v. FTC standards in labeling and
advertising food products.
